Ingredients

Produce

  • 1 pint cherry tomatoes optional
  • 1/2 cup sun-dried tomatoes
  • 2 shallots
  • 2 garlic cloves
  • fresh parsely optional

Refrigerated

  • 1/2 cup Parmesan cheese
  • 2 oz cream cheese
  • 1 cup heavy cream

Grocery

  • 12 oz linguine
  • 1/2 cup white wine
  • 1/2 cup chicken stock
  • olive oil

Meat

  • 1.5 pounds boneless skinless chicken thighs

Spices

  • 3 tbsp Cajun seasoning
  • 1/2 tsp smoked paprika optional
  • 1/2 tsp salt
  • 1/2 tsp black pepper

Instructions

Marinate & Cook Chicken

  • Marinate chicken in olive oil and Cajun seasoning for 30+ minutes.
  • Sear 4–5 minutes per side in a hot cast iron pan until cooked (165°F)
  • Rest, then slice thin.

Cook the Pasta

  • Boil linguine in salted water until just shy of al dente.
  • Reserve 1 cup of pasta water.

Make the Sauce

  • Sauté shallots in sun-dried tomato oil for 3–4 minutes.
  • Add sun-dried tomatoes, diced peppers, and garlic.
  • Season with Cajun seasoning, salt, and pepper.
  • Deglaze with wine, reduce, then stir in stock.
  • Add heavy cream, then Parmesan and cream cheese until smooth.
  • Adjust seasoning.

Combine

  • Toss linguine into sauce.
  • Add pasta water as needed
  • Top with sliced chicken

Serve

  • Plate and garnish with parsley
  • Enjoy!
