Instructions
Cut each slice of brioche bread into bite-sized pieces by first cutting it into strips and then into cubes. Set aside.
In a mixing bowl, whisk together 3 eggs, 3/4 cup milk, 1 tbsp vanilla extract, 1 tbsp cinnamon, 1/2 tsp salt, and 1/2 tsp pepper (optional). Ensure the batter is well mixed and smooth.
In a small bowl, combine 1/2 cup sugar and 3 tbsp cinnamon. Mix well and set aside for dipping the cooked French toast bites.
Heat 1 tbsp butter in a skillet over medium-low heat. Dip each bread cube in the egg batter, letting it soak for about 3 seconds.
Place the soaked bread pieces in the skillet and cook for 1-2 minutes per side, or until golden brown. Work in batches if necessary.
Once cooked, immediately dip the French toast bites into the cinnamon sugar mixture, coating evenly.
Serve the French Toast Bites warm. Enjoy them as is, or with maple syrup, whipped cream, or your favorite dipping sauce!
