Ingredients

  • 8 slices Bacon
  • 2 large Sweet Onions
  • 4 Garlic Cloves
  • 1/4 cup Green Onions
  • 1/4 cup Fresh Dill
  • 1 cup Sour Cream
  • 1 tbsp Butter
  • 1 tbsp White Wine Vinegar
  • 1/2 tsp Black Pepper

Instructions

  • Dice the onions, garlic, fresh dill, green onions, and chives. Set aside.
  • Cut the bacon into small bite-sized pieces.
  • In a skillet over medium heat, cook the diced bacon until crispy. Drain excess grease and set aside.
  • Add 2 tablespoons of butter to the skillet and cook the sliced sweet onions on medium-low heat for about 20 minutes, stirring occasionally, until they become golden brown.
  • Add minced garlic and cook for an additional 2-3 minutes.
  • Stir in the white wine vinegar and continue cooking for 2-3 more minutes until onions are fully caramelized.
  • In a mixing bowl, combine 1 cup of sour cream, 1/4 cup of mayonnaise, and 8 oz of softened cream cheese. Stir until smooth.
  • Add the caramelized onions and cooked bacon to the creamy mixture. Stir to combine.
  • Fold in the fresh dill, green onions, and chives. Season with salt, pepper, and 2 teaspoons of lemon juice if desired. Mix everything together until evenly combined.
  • Let the dip chill in the refrigerator for at least 20 minutes to allow the flavors to meld.
  • For serving, garnish with extra chopped bacon and green onions. Serve with chips, crackers, or fresh vegetables for dipping.
